John Uselton and Michael Lowe opened DC's first distillery since Prohibition. They started the distillery in 2011, looking to the craft of great gin. Their gin start by milling 100% soft winter wheat and creating a mash. Concentrated in a copper pot still then twice distilled, the gin gains its complexity and refined aromas from selected botanicals are suspended for a gentle extraction.
